Here are the ingredients of the "Pizza Mantovana", winner of the first selection of Master Pizza Champion, by Paolo Moccia from pizzeria Da Orlando in Scandiano (RE): Mozzarella "fior di latte", white "soffritto", pumpkin cream, rosemary, guanciale (bacon), Parmigiano Reggiano, amaretti, Balsamic Vinegar of Modena 15 years and Balsamic Pearls from Acetaia Leonardi.
The 6th edition of the Pizza talent show open to professional Pizzaioli from all around the world, was held on October 21st during the MILANO HOST fair. Many pizzas had classical automn ingredients like porcini, figs, chestnuts and pumpkin, like the one presented by Paolo Moccia. Balsamic and pumpkin is always a delicious pairing often found in the traditional local recipes.
Paolo Moccia had already won the competition Pizza Show held at Acetaia Leonardi last June and his talent is now confirmed by this second victory which we hope will lead him to the highest step of the podium during the final transmitted on SKY.
