  1. The grape must used: The basic ingredient of true Traditional Balsamic Vinegar of Modena DOP is cooked must, that is, the grape juice concentrated through cooking. A high-quality must, rich in natural sugars, is essential to obtain a dense and full-bodied product.
  2. The aging process: During maturation, which takes place in barrels of fine wood such as oak, cherry and chestnut, the vinegar gradually loses water through evaporation: this natural process increases the concentration of sugars and aromas, making the product denser and richer.
  3. The duration of aging: Traditional Balsamic Vinegar must be aged at least 12 years to obtain DOP certification, but the finest vinegars can reach or exceed 25 years. As time passes, the density increases further, together with the aromatic complexity.

Most people associate higher density with better quality, but this is not always the case. For certified products such as Tradizionale di Modena DOP, a dense consistency is a distinctive sign, the result of long aging and an artisanal production process. To distinguish a quality product from a less valuable one, it is useful to consider other factors besides density, such as associated certifications.
